Broccoli and Cauliflower Bake

NOTES:
This bake is a great snack/ light meal during nightshift (to support optimal health and energy levels), or at any time of the day! Store in the fridge and eat within 5 days, or the freezer and eat within 3 months.

Ingredients:

  • 200g Cauliflower
  • 200g Broccoli
  • 2 cups cottage cheese
  • 2 eggs
  • 2 tbsp grated cheese
  • 2 tbsp almond flour
  • Garlic, cumin, paprika and coriander (or herbs of choice)

Method:

  1. Preheat the oven to 180 degrees
  2. Cut Broccoli and cauliflower into flaurettes (or diced stems) and steam until slightly soft
  3. In a bowl, combine the steamed veg with all other ingredients
  4. Pour into a baking dish and bake for about 25 to 30 minutes, or until it becomes golden on top and more solid throughout
