This bake is a great snack/ light meal during nightshift (to support optimal health and energy levels), or at any time of the day! Store in the fridge and eat within 5 days, or the freezer and eat within 3 months.
Ingredients:
200g Cauliflower
200g Broccoli
2 cups cottage cheese
2 eggs
2 tbsp grated cheese
2 tbsp almond flour
Garlic, cumin, paprika and coriander (or herbs of choice)
Method:
Preheat the oven to 180 degrees
Cut Broccoli and cauliflower into flaurettes (or diced stems) and steam until slightly soft
In a bowl, combine the steamed veg with all other ingredients
Pour into a baking dish and bake for about 25 to 30 minutes, or until it becomes golden on top and more solid throughout
