Choc Chip Pecan Protein Cookies
Servings: 12 Prep time: 5min Cooking time: 25-30min
NOTES:Store in the fridge and eat within 5 days, or store in the freezer and eat within 3 months.
Ingredients:
- 1 can chickpeas (Drained and rinsed)
- 1/3 cup Peanut Butter (or substitute peanut or cashew butter)
- 1/2 cup sugar-free monk fruit sweetener
- 1/4 cup vanilla protein powder
- 2 tsp pure vanilla extract
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- Pinch of sea salt
- 3 tbsp unsweetened almond or other milk
- 1/2 cup chopped pecans
- Sugar-free Choc chips
- Flaked sea salt for topping (optional)
Method:
- Preheat oven to 180 degrees
- Add all ingredients (apart from the pecans, chocolate chips & salt topping) to a food processor. Blend until well combined
- Fold in Chocolate chips and pecans
- Form into small cookies and place on a baking tray with baking paper
- Bake for 25 to 30 minutes
- Allow to cool before enjoying!
