Choc Chip Pecan Protein Cookies

NOTES:
Store in the fridge and eat within 5 days, or store in the freezer and eat within 3 months.

Ingredients:

  • 1 can chickpeas (Drained and rinsed)
  • 1/3 cup Peanut Butter (or substitute peanut or cashew butter)
  • 1/2 cup sugar-free monk fruit sweetener
  • 1/4 cup vanilla protein powder
  • 2 tsp pure vanilla extract
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of sea salt
  • 3 tbsp unsweetened almond or other milk
  • 1/2 cup chopped pecans
  • Sugar-free Choc chips
  • Flaked sea salt for topping (optional)

Method:

  1. Preheat oven to 180 degrees
  2. Add all ingredients (apart from the pecans, chocolate chips & salt topping) to a food processor. Blend until well combined
  3. Fold in Chocolate chips and pecans
  4. Form into small cookies and place on a baking tray with baking paper
  5. Bake for 25 to 30 minutes
  6. Allow to cool before enjoying!
