Zucchini Muffins

Servings: 4            Prep time: 5min           Cooking time: 25min

Ingredients:

  • 2 medium zucchinis
  • 1 medium carrot
  • Diced spring onion
  • 4 eggs
  • 2 tbsp oats (blended into a flour)
  • 1 tsp baking powder
  • Herbs and spices of choice

Method:

  1. Grate carrot an zucchinis, then fat down thoroughly until all excess water is removed
  2. In a large bowl, combine all ingredients
  3. Pour into 4 muffin tins
  4. Bake on 180 degrees for 25 minutes (or until slightly firm and golden)
  5. Remove from the oven and enjoy!
